 Pizza and pasta are found all over the world beside hamburgers and
sushi: exquisite dishes, but hardly a delight served together on the
same table. Bolzano’s gastronomy combines all that is excellent from
the unpretentious but tasty Alpine fare, with the fragrant delicacy of
Mediterranean cuisine. Both coexist and complement each other
harmoniously on the town’s restaurant menu cards. Tyrolean specialities
include ‘knödel’ dumplings, ‘Schlutzkrapfen’ (pasta parcels filled with
spinach), venison goulash, boiled cured pork with sauerkraut, as well
as fresh lake and river fish, while Tyrolean sweets and desserts are
favourites the world over – everybody knows strudel, though perhaps
kaiserschmarren (scrambled pancake with raisins), chocolate, cream and
ricotta cakes and flans are less familiar. Other popular food products
include speck (smoked raw haunches of pork) and locally-grown fruit.
Few towns can offer gourmets such an amazing diversity and choice
compared with Bolzano and its surroundings, from simple eateries, cosy
farmhouse inns through to Michelin-star restaurants.
